Tangy Broccoli Crunch Slaw

I saw this recipe a few weeks ago on Everybody Likes Sandwiches and for several days, I just couldn’t get it out of my head. I love broccoli, and I’m pretty sure you already know that if you’ve read this blog before. I love it steamed, roasted, and even raw—in all its forms. The fact that this was a recipe with the sole purpose of dressing up raw broccoli immediately caught my attention. I finally made it, with a few modifications, and it was scrumptious. If you love broccoli, you’ll love this crunchy slaw. If you don’t, well, you might like it anyway. Or you might not. But then I’ll feel sorry for you.

It’s super easy—you essentially just throw everything in a bowl and mix it up! You’ll need a large head of broccoli, roughly chopped into smallish pieces (about 3 cups’ worth). You’ll also need coleslaw (cabbage), diced red onion, chopped toasted almonds, dried cranberries, the juice of 1 lemon, Greek yogurt, lowfat mayo, and agave nectar or honey.

Start with your broccoli, red onion, and coleslaw.

Add your almonds and dried cranberries. Mix your mayo, Greek yogurt, and lemon juice together, then add it to the slaw mix.

Then mix it all up! So easy!

So tasty and so healthy! I love the texture of this slaw because I’m big on crunch. I hate soggy food in general, but I especially loathe soggy veggies, so this is perfect!

The crunchy raw broccoli combined with the crisp coleslaw and the toasty almonds is amazing—then, the dried cranberries and Agave add a hint of sweetness against the tangy yogurt and mayo.

This is a perfect side dish to pack in lunches, and it’s really filling and satisfying. Give it a try!

Adapted from Everybody Likes Sandwiches

1 large head broccoli, roughly chopped (2 1/2 to 3 cups’ worth)
1 cup coleslaw
1/2 cup red onion, diced
1/3 cup dry roasted almonds
1/4 cup dried cranberries
4 T lowfat mayo
4 T fat free Greek Yogurt
2 T Agave nectar or honey

Combine first five ingredients in a mixing bowl. Combine last 3 ingredients in a separate, small bowl and whisk to combine. Pour dressing over slaw mixture and toss to combine.

    What a tasty side dish. A small amount is surpisingly filling. Had to figure the calories on a recipe calculator out of curiosity. As I figured, it’s a much better alternative to a lot of other slaw recipes I’ve used in the past.

      Yes, it’s definitely filling! I didn’t add the nutrition facts for this one because there’s really not a set serving size—but 99% of everything in it is so good for you that the more of it you eat, the better. :)

    I made this as a ‘more creative’ cole slaw for my graduation party… got broccoli from the farmer’s market, where “1 head” was VERY misleading!! 12 cups of chopped broccoli later, I have a 5x batch of this… it’s SO tasty, I don’t think we’ll have a problem polishing this all off!
